Turkish Recipe on gulet: Karniyarik split belly eggplant recipe

I’ve always loved eggplants. When the season comes, I just can”t get enough of them. I eat them in salads, sandwiches, grilled or fried. But this recipe is one of the best I”ve come across in a long time.
Even if gulet cruises aren’t on top of your list, you still have to try this dish.
For this recipe you will need:
- 8 baby eggplants
- 1 cup of vegetable oil
and for the filling:
- 1/2 pound (227g) of ground beef
- 1 medium size onion
- 4 cloves of garlic
- 1/2 bunch of parsley
- 2 tbsp of vegetable oil
- 1/3 tsp of black pepper
- salt to taste
- 1/2 cup of boiling water
- 1tbsp tomato paste
- 2 large tomatoes
- 8 green peppers
